The Real Brownies

A surprise for the wife - revisited
The bakers edge pan is getting a work out. Since I despise the idea of baking from a box (all due respect to Betty Crocker), I thought I would try to make brownies using the recipe in the instructions for the pan. The first batch came out very nicely. Took them into work, they were enjoyed with rave reviews. The second batch went to Westview manor where my wife works. They were cleaned out (along with a batch of special recipe chocolate chip cookies) in no time flat.

So I thought I would blog these brownies. They really are easy to make, I clocked them at a half hour prep time (with several stops to watch Brett Favre on Monday Night Football). I know this is considerably more time than the five minute box, but from what I understand the results are well worth it. Remember I do not like brownies, the women in my life do.

chocolate and butter just starting to meltGet 5 ounces of Unsweetened chocolate and a stick and a half of unsalted real butter (12 tablespoons). Get a medium bowl that can handle getting heated, place it on a medium sauce pan with just enough water in it to keep from hitting the bottom of the bowl. Place the butter and chocolate in the bowl and set on stove to simmer. I cover it with a dinner plate and stir with a heavy wooden spoon from time to time.

Meanwhile I get the rest of the ingredients ready.

  • ingredients 1 cup of sugar
  • 1 1/4 cup of brown sugar (packed of course)
  • 4 eggs
  • 1 1/2 teaspoons of vanilla
  • 1 1/4 cup of flour
  • 1/4 teaspoon of salt
  • 1 cup of chocolate chips

Take the bowl off the heat, pour in the sugar, stir well, then eggs and vanilla, stir again. flour salt chocolat chips addedAdd the salt and flour, stir completely, finally, fold in the chocolate chips.

batter in panMake sure the Baker’s edge pan is sprayed with cooking spray. Pour the batter into the pan spreading evenly. Put pan into the oven preheated to 375 degrees.

This batch got slightly overcooked. When checking the brownies, a toothpick should be used, it should come out with moist crumbs on it. The mix has the chocolate chips in it, they will cause the toothpick to be quite moist. I will bring this batch into Lehman’s headquarters for tasting, perhaps I will also get some comments about the brownies in the blog. Does anybody have favorite brownie recipes to share?

    Thanks for the delicious brownies, Greg. You can definitely tell they are homemade and not from a box. Perhaps we could score a batch of those special recipe chocolate chip cookies you mentioned soon…

    I did not think that I would have much use for the Baker’s Edge Pan because I am a fan of the gummy middle brownies…but I was happily surprised with these brownies. Even though Greg says they were overcooked, I didn’t think so at all. They were moist in the middle and a little dryer on the outside, just the way I like them. Great recipe and especially the added chocolate chips—you can never go wrong by adding chocolate chips!!!

    I have never been a fan of eating the edges of any brownie or bar cookie. I have always selected the center pieces because I believed they would be moist and chewy and the edges dry and hard. I have changed my mind after tasting your brownies baked in the Bakers Edge Pan. Even though you thought they were over-baked, they were still moist and chewy. Great flavor/recipe.

    I have to say that the recipe for the brownies was very nice. After testing, I am not a fan of the edges at all. If you are not a fan of edges, keep you regular pan and feed the edges to someone who doesn’t mind them. If you are someone who likes the edges, this product is a must have. It would be a great gift idea for the edge-lovers on your list.

    Wow, what a Blogger with photos even. I’ve had my eye on this pan and am going to add the pan to my Lehmans Wish List. I LOVE BROWNIES although based on the discussion here I am not sure that I am a lover of edges. I do LOVE NUTS in my brownies and prefer not to even eat a brownie if it doesnt have nuts.

    As far as recipes go, lets have some with NUTS, and various kinds of nuts to boot!
